Foraging and creativity in a season bakery!
Erzulie Dolcevite is a season bakery in Traversetolo (Parma), run by Yenifer Bellini and Andrea Forti. The peculiarity of this place lies in the research and the use of fresh and seasonal ingredients, for both sweet and savoury pastry. The knowledge of the natural and seasonal cycles allows the owners to alternate the recipes and offer their customers various menus. Yenifer personally picks the fruits, herbs and flowers, she dehydrates them and uses them as decorations or ingredients in her recipes. Instead, Andrea is in charge of the beverages: he also attentively selects the products and he usually prefers local and virtuous producers, such as the organic ones. Besides a relishable selection of wines and ciders, they offer our coffees, which they considered the perfect match for their quality standards!
With Erzulie Dolcevite we share our philosophy and the same quality standards, as a guarantee of absolute transparency and traceability in the supply chain.
Yenifer and Andrea introduce themselves and tell us the story of their shop:
“Hi, I’m Yenifer of Erzulie Dolcevite, the seasonal bakery opened in December 2020 in Traversetolo, a small town near Parma. Our bakery is seasonal, because I only use seasonal fruit and vegetables. Another peculiarity of my bakery is that I use flowers and herbs that I personally pick, dehydrate and use in my sweet and savoury recipes. This project was conceived together with my husband, Andrea, who is in charge of the beverages. Hi, I’m Andrea and I intentionally choose organic producers, who share the same philosophy we have in our shop. This way we can offer interesting combinations of wines and ciders with sweet and savoury pastries. When we met Le Piantagioni del Caffè, we found that their philosophy fully complied with our products.”
