Description

Finca Los Bellotos is located in the western part of a volcano called Cerro Verde and it was bought by Cafè Pacas in 2012.
The Pacas family’s enterprise goes back five generations, spanning across 150 years. Today Café Pacas is comprised of various farms and the Pacas variety was discovered in one of these.
This farm takes its name from the famous, gorgeous, endangered Belloto trees that can be easily found around the farm and create a dense canopy of shade for the coffee.
The farm also faces the Izalco Volcano which protects coffee trees from wind.
Labors at this farm starts earlier than usual in the morning. The reason is because here, in the afternoon, fog enters through the farm and interferes with visibility.
Ruperto Bernardino Merche is the farm manager and believes in the goodness of humans. He has been able to create a team of hard working (tolerance to coffee rust is extremely low), spiritual souls that make big efforts to produce amazing coffees.
Finca Los Bellotos is one of the most beautiful and well kept farm we have ever visited and  is where the famous Bernardina varietal was discovered!

Extraction method

The coffee doses indicated below refer to a double shot extraction (two espressos brewed simultaneously).

Stay within the range we recommend for each of our lines, have fun evaluating the differences in extraction as the dose varies, and let us know which dose produces the best extraction in your opinion!

Weigh it

Blend: 15g-16g Single Estate: 16-18g Limited Edition: 17-18g

Grind it

Obtain a powder with a consistency similar to a cross between white flour and yellow flour.

Position it

Place the ground coffee in the filter holder, level it, and press it down.

Enjoy it

Make your espresso and enjoy it with friends if possible!
