Many people think of coffee as a commodity. A sack arrives. Beans go into the machine. Coffee ends up in the cup. To us, the supply chain is a living ecosystem, shaped by people, miles travelled and courageous decisions.
01 The soil
The journey starts between 700 and 2,000 metres above sea level. This is where we select our plantations. We don't just “buy coffee”. We choose soils, microclimates and botanical varieties. We work only with producers who care for the land as much as we do and who believe in building the right partnerships. People who hand-pick only perfectly ripe coffee cherries, rejecting anything that falls short of perfection. Because quality leaves no room for compromise, not even at the very beginning. This isn't a production line. It's a relationship built on trust.
02 The Journey
Once harvested and processed (whether washed, natural or through innovative fermentation techniques), the coffee begins its journey. But every step is fully traceable. We know who loaded it, which port it left from and when it will arrive in Livorno. This is what Awareness means to us: replacing uncertainty with the assurance of a transparent and ethical supply chain.
03 Roasting
When the green coffee arrives at the roastery, Prunella's scientific approach and Enrico's vision come into play. Every plantation has its own “voice”. Our role is to let it be heard. Using a rigorous scientific approach, we identify the exact roast profile that allows every aroma to reach full expression. Analysis. Tasting. Precision.
04 The Barista
Whether it's at your favourite café or in a hub like FLUID, the barista is the one who completes the journey. Grinding. Temperature. Pressure. A professional barista treats every bean with the respect it deserves, turning technical expertise into a story told through every cup.
