In 2010 Jesus Salazar developed a coffee-growing project in Chiapas involving the Caféologo Mayan communities. Today he works directly with 280 micro-producers who grow high-quality coffee under shade on small farms. The diversity of flavour profiles in Caféologo’s coffees is incredible. His vision of coffee growing is philosophical and humanist. Above all, he wants to promote the quality of Chiapas coffees and surround himself with partners who share his state of mind, his philosophy and his values, in order to defend a different kind of coffee growing in Mexico, with a return to high quality that creates value for the indigenous communities that produce it.

The commitment of Cafeologo

Sergio Orantes is one of the Cafeologo’s partners. He grows the Marsellesa variety in the Sierra de Cerro Brujo in a climate that is highly positive to coffee production. Jesus Salazar’s team took care of the natural process for this coffee and looks forward to continue to work with this producer to deliver ever higher quality coffees.
