Acidity

One of the primary coffee taste sensations. It comes from the organic acids in coffee and is more pronounced in lightly roasted products and Arabicas grown above 1500 metres. The sensation corresponds to the time that the coffee aftertaste lingers on the palate. Usually, the higher the acidity, the quicker the taste leaves the palate.
